Khasta Kachori, An indian popular snacks

Ingredients:
For the dough:
2 cups all-purpose flour
4 tbsp ghee or oil 1/2 tsp salt

- 1 cup yellow moong dal
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- Oil for frying
Instructions:
1. Start by making the filling. Soak the moong dal in water for about 2 hours. Then drain the water and grind the dal coarsely in a blender.
2. Heat some oil in a pan and add the cumin and fennel seeds. Once they start spluttering, add the ground dal and cook it on low flame for about 10 minutes.
3. Add the coriander powder, turmeric powder, red chili powder, garam masala, and salt to the dal mixture. Cook it for another 5 minutes, stirring continuously. Remove from heat and let it cool.
4. Now, let's make the dough. Mix the flour, ghee, and salt in a bowl. Slowly add water and knead into a stiff dough. Cover it with a damp cloth and let it rest for about 20 minutes.
5. Divide the dough into small balls and flatten them with your hands. Fill each ball with a spoonful of the dal filling and seal the edges by pinching them together.
6. Heat oil in a deep frying pan. Once the oil is hot, gently slide the filled kachoris into the oil and fry them on medium flame until they turn golden brown and crispy.
7. Remove the kachoris from the oil and drain them on a paper towel to remove excess oil.
